Classic Banana Bread

Soft and moist banana bread with chopped pecans for an added crunch!

Ahhh the smell of freshly baked goods - the fresh out of the oven banana bread filled my kitchen last night with such a warm and sweet aroma that I found it incredibly hard to resist from taking a bite!

For this recipe post, I switched things up a bit and created a visual of the ingredients. 

Note: Not pictured is 1 teaspoon baking soda

Prep time: 20 minutes
Oven time: 60 minutes at 350º F

Directions:

1. Using a mixer, cream together softened butter and (light or dark) brown sugar. 

2. Add the eggs one at a time, beating after each addition. Mix in yogurt, mashed bananas, and vanilla.

3. In another bowl, toss together the flour, baking soda, cinnamon, and salt. Using a spoon, mix the dry ingredients into the wet ingredients. After there are no flour pockets remaining, fold in the pecans. Do not over mix.

4. Pour the batter into a 9x5 loaf pan and bake for 60 minutes at 350º F . Loosely cover the bread with aluminum foil at the 30 minute mark to prevent the bread from getting too brown.
